Crock Pot Recipe for Easy Brunswick Stew

brunswick stewWhen my husband and I lived in Georgia, he got turned on to Brunswick Stew. Since we’ve been back in South Florida, he has not found a restaurant that makes good Brunswick Stew. Then, a few months ago I came across a Southern Living Magazine recipe for Easy Brunswick Stew using your crock pot. It takes about 12 hours to make, but it was definitely worth it. My husband loved it. Here’s the recipe:

Ingredients:

3 pounds boneless pork shoulder roast (Boston Butt)

3 medium-size new potatoes, peeled and chopped

1 large onion, chopped

1 (28-ounce) can crushed tomatoes

1 (18-ounce) bottle barbecue sauce

1 (14-ounce) can of chicken broth

1 (9-ounce) package frozen lima beans, thawed

1 (9-ounce) package frozen corn, thawed

6 tablespoons brown sugar

1 teaspoon salt

Directions:

Trim roast and cut into 2-inch pieces. Stir together all ingredients in a 6-quart slow cooker.

Cover and cook on LOW 10 to 12 hours or until potatoes are fork-tender. Remove pork with a slotted spoon, and shred. Return shredded pork to slow cooker, and stir well. Ladle stew into bowls.

This recipe makes 8 servings.

Prep Time: 15 minutes; Cook Time: 12 hours

Cooking on LOW heat for a long time makes the meat extremely tender, so it shreds easily; HIGH heat yields a less tender product. I cooked my stew on LOW 10 hours. And next time I make it, I’m going to ask the butcher to cut the roast into 2 inch pieces for me.

To compliment the meal, I also served garlic bread and sweet tea. My husband can’t wait for me to make it again.

A Joke entitled Eat Right!

A couple of weeks ago my mom e-mailed this joke to me.

Yesterday I went to the doctor for my yearly physical.

My blood pressure was high, my cholesterol was high, I’d gained some weight, and I didn’t feel so hot.

My doctor said eating right doesn’t have to be complicated and it would solve my physical problems.

He said just think in colors; fill your plate with bright colors: greens, yellows, reds, etc.m & m's

I went right home and ate an entire bowl of M&M’s and sure enough, I felt better immediately.

I never knew eating right could be so easy!!

This is what I call creative thinking or should I say creative dieting.

Celebrate Literacy in September by getting a Broward County Library Card & more

List of Things to Do While Waiting in the Carpool Lane

Every school day I spend 10 – 15 minutes in the carpool lane, waiting to pick up my kids. Over the course of a week, we’re talking about an hour of waiting.

Instead of just watching the time go by, I try to take care of some things that may otherwise get overlooked or just further delayed.

Here is a list of things I do while waiting in the carpool lane.

  1. Make phone callscarpool
  2. Read mail
  3. Clean garbage out of car
  4. Pay bills
  5. Listen to audiobook
  6. Clean out purse
  7. Eat lunch or snack
  8. Balance checkbook
  9. Read magazine or book
  10. Put loose change away
  11. Make list of things I need to do
  12. Fill out school forms or paperwork
  13. Think about what to make for dinner
  14. Make out grocery list
  15. Wipe down inside of car with Wet Ones or ArmorAll wipes
  16. Write out cards (party invitations/thank you notes)

Taking care of these little things helps me to stay a little more organized and to focus less on the wait.

Gift ideas for college girls

My sister came down to visit us for her 19th birthday. While she was here, I asked her to give me some ideas as to what she would like for her birthday. Since she is a new college student I was interested to know what kind of gifts or accessories she would want. It’s been a while since I was in college so I wanted to get back in touch. I remember when I first started college I didn’t have money to spend on anything I wanted. Giving a gift is the easiest way to let someone know your thinking of them and that you care for them. Hopefully this list will help give you some ideas to surprise that special person in your life with a gift. I know it surprised my sister.
